
Our Winery produces high quality Cabernet Sauvignon, Shiraz, Chardonnay and Spanish Ruby & White Port.
In our Winery we only use our own home-grown grapes and do not ever purchase grapes from an outside source or another winery. This way we can directly control the growing process and guarantee the high quality of the finished product is maintained.
We do not out-source any processing. We only use our own in-house facilities.
Doing this allows us 100% control over how the vines are grown, how and when the grapes are picked and, most importantly, how the grapes are handled, stored and processed.
Our varietals have been specifically sourced based on their historical quality of producing rare and fine wines and, as required, imported from overseas, as is the case with the Spanish Ruby & White Port and our Cognac vines.
It is important to us that we are able to maintain 100% control; from the selection of vines, to their growing and care, to their harvest and, finally, to their processing.
When the wine has been processed, the final stage is the storage and ageing. This is a very important part of the making of fine quality wine.
This is done using the 8,000 year old Georgian tradition of using terracotta qvevri’s, large 600 litre pots, which are fully buried in the floor of the alcohol room, where it is left in the ‘Cradle of Mother Earth’ to be nurtured and cared for without human intervention or disturbance.
Only then can we say, with confidence, that the final product will be of sufficiently high calibre to put our label on it.
