
We own and operate a boutique 1,000 litre copper pot still and 20 plate, 12″ copper column still.
The pot still is used for the distilling of fine grade Irish Whiskey, Brandy and Cognac while the column is used for producing fine grade Gin and Vodka.
Each 1,000 litre batch run will produce about 225 litres of spirits with an alcohol content of between 88 and 92 percent.
The spirit is then stored in either terracotta qvevri’s, which are fully buried in the floor of the alcohol room, new American or French oak barrels, or American and French oak barrels previously used for the ageing of Sherry or Cabernet Sauvignon. This is where the ageing process begins.
Ageing can be anywhere from 2 years, as in the case of Gin and Vodka, to 6 years, as in the case with Brandy and Cognac, to 10+ years, as in the case with Irish Whiskey.
The end result, a very refined spirit, which then has added to it pure, sterilised water to ‘cut’ the alcohol content back to the more traditional range of 40 to 45 percent.
